Green Almonds, Fava Leaves, Ramps & Cardoons.
Notes: asparagus is still currently from MX, CA season starts soon. Rhubarb is from Holland, WC starts soon. Fiddleheads are coming from the West Coast, EC later this season. Two types of pea tendrils in house: slightly bigger, good for flash wilting- Knoll Farm; smaller and best for salad or a party hat for that fish dish- Equinox Farms. Fava leaves are another good wilting option.

What’s up, Maine Grains? Just ate at Blue Hill Stone Barns last week, and they’re doing the coolest stuff in their bakery with the flours and wheat berries from Maine Grains: malting them, sprouting them, grinding them and otherwise inspiring us all. Grains are produce too.
