We’re at that place in Spring where asparagus of all kinds are peaking, luxe mushrooms like morels, bluefoots and the difficult-to-obtain cepes rule, and stone fruit is just beginning, but far from it’s peak. It’s a good time to take early-season stone fruit and shave it, grill it, hard-roast it, or cook it down to get the most from it.
Current staff favorites not listed below: Maine Duck Eggs, Heiwa Organic Tofu from Maine (stay tuned for a post coming soon on this local, hand-crafted tofu) and Japanese Aged Shoyu, or small-batch hand-made soy sauce, imported from Japan. This shoyu, like a hardcore bourbon, shouldn’t get mixed with anything, just used directly for dipping raw fish or veg. Tuck away a bottle for VIP sashimi.
